A simple summer salad that is yummy for your tummy!

4 slices bacon

1 package (10-ounce) frozen green peas, thawed and drained

1 cup Extra Sharp cheddar, shredded

2 hard-boiled eggs, peeled and chopped

3 tablespoons mayonnaise

2 teaspoons fresh lemon juice

Salt and pepper, to taste

1.  In a large nonstick skillet, cook the bacon over medium heat until crisp. Transfer to a paper towel to drain and cool.

2.  In a medium bowl, combine bacon, peas, cheese, and eggs. Stir in mayonnaise, lemon juice, salt, and pepper.

3.  Serve immediately.
