Peanut Butter Bars – Gluten Free

1 cup Bob's Red Mill All Purpose Baking Flour

1 cup Udi's Gluten Free All Natural Granola

1/2 cup sugar

1/2 cup brown sugar

1/2 teaspoon Bob's Red Mill Premium Baking soda

1/4 teaspoon sea salt

1/2 cup Smart Balance Butter & Canola Oil Blend, softened

1/3 cup peanut butter

1 teaspoon vanilla (gluten free)

1 egg

1/4 teaspoon xanthan gum


1 cup semi-sweet chocolate chips


1/3 cup powered sugar

2 tablespoons peanut butter

5 teaspoons Rice Dream milk - Original Enriched

1.  Preheat oven to 350 degrees.

2.  Grease bottom of 13x9-inch pan.

3.  In large mixing bowl, combine all bar ingredients; mix on low speed until all ingredients are blended together. Spread on bottom of prepared pan.

4.  Bake at 350 degrees for 15 to 20 minutes or until golden brown.

5.  Once bar has been pulled out of oven, immediately sprinkle bar with chocolate chips. Let chocolate chips stand for 3-5 minutes. The chocolate chips will melt. Once they start to melt, using a knife, evenly spread chocolate over bar.

6.  In small bowl, combine glaze ingredients. Once mixed, drizzle or pipe glaze over chocolate. Let cool completely then cut into bars.
