Potato & Leek Soup

Who doesn't like the combination of potato & Leek? Every one does. Enjoy a hot and fresh soup this winter

3 medium sized potatoes – diced (you may use any potato for this recipe)

3 leeks – finely chopped

2 tablespoons of unsalted butter (you may use table butter also)

3 cups of vegetable broth

Salt to taste

Pepper to taste (I have used black pepper & white pepper both)

1/2 cup a of milk (good substitute for cream if you don’t want the fat content from cream)

Cooks' note:
If you are using table butter which is salted butter then add salt accordingly.
You can enjoy the soup with croutons/toast or just by itself. I had a multigrain toast along with it.
