preparation

Zucchini no noodle lasagna with oyster mushrooms 1.  Preheat oven to 350.

2.  Prepare chicken for stuffing.(You can either, slice chicken breasts in half and make slices or beat the chicken breast until thin and wide.)

3.  Boil spinach in a pot half with water for 10 minutes, drain and set aside.

4.  Sautee an onion and then add spinach and parsley, continue cooking for 5 minutes.

5.  Add feta and stir for a few minutes.

6.  Lay the chicken breast and add spinach mixture onto each chicken breast in the middle.

7.  Wrap chicken around mixture and secure with a toothpick.

8.  Place in glass baking dish and sprinkle with red pepper and olive oil.

9.  Cook for 45 min to an hour and serve.
